Shanghainese Pork Dumplings

For 4 person

Stock
166g lean pork
166g chicken
7.5g preserved ham
166ml water
Boil and take 80ml of stock

Pork Filling
120g minced pork
Pinch of salt
3 pinch sugar
sesame oil

Dumpling wrap
20g flour
13ml water
Cut into 7.5g ball pieces

Add stock to mince.
Wrap into dumpling wrap.
Steam for 10 minutes.
